I know this is a really serious situation but I think only laughs and chocolate in heavy doses will get us through! I made this recipe years ago but since we have all gone baking mad in this crazy time I've given it a little update. Especially for all the people having birthdays in lockdown and unable to get a cake. It's much less complicated and an AWESOME alternative to a Birthday cake.
Who doesn't love a fresh out the oven batch of cookie's? I don't want to snub a ‘Millies Cookie’ but they always look nicer than they taste to me. SO I decided to make my own Giant Cookie recipe yearrrs ago and I think it's pretty good if I do say so myself. Super easy and a great for those who are not keen on baking much.
Ingredients:
- 14" Pizza Pan, you could split between 2 9" cake tin's though.
- Grease Proof Paper
- 225g Butter
- 150g Caster Sugar
- 165g Soft Brown Sugar
- 1 tsp of Vanilla Essence
- 2 Large Eggs
- 280g Plain Flour
- 4g Salt
- 5g Bicarbonate Soda
- 300g of Chocolate Chips any kind that is your favourite I use large milk chocolate and some white ones.
Note:
You could use nuts, raisins, marshmallows, M and Ms anything you have...I’m going to give everything a go at some point.
*Preheat Oven to 170C
*In a large bowl or mixer beat together the Butter, both Sugars and Vanilla until fluffy.
*Beat in one egg at a time until all creamed together.
*Gradually beat in the Flour, Bicarb and salt until all combined.
*Then stir in the chocolate chips or any other goodies you might like.
*Spoon out onto the grease proof paper and using the back of a wooden spoon or spatula smooth out into a circle, leaving a little gap around the edge at least an inch. It will spread when baking and you don't want it to spill. If you have a little mixture left over just pop blobs of it on a tray and bake after for around 8minutes for mini versions.
* Place in the oven and bake until JUST golden and still quite soft. It will harden when cool so be careful not to overdo it. I did 22mins as a guide and it was perfect.
Any mixture left over.
*Once cooked place the pizza tray on a cooling rack and let it completely cool.
* I'm always too scared to transfer it out in case it broke so decorated and served it on the tray. However once decorated if you have big enough place or stand feel free.

Decorating:
I put a thin layer of Nutella on, you could use anything though like butter cream or Lotus spread! Decorate as you like and if you're feeling crafty you could pipe a Happy Birthday or a message on like this first one I ever made below.
Now cut it like a slice of pizza and ENJOY!

*Bounty – Choc Chips and desiccated coconut...even a shot of Malibu. Nutella and coconut on the top.
*Reese's - Some nutty peanut butter and choc chips. Mixture of Nutella and Peanut butter and PB M and Ms on top.

I tried this giant cookie recipe, and it was amazing! It's like having a huge, gooey treat all to yourself. By the way, while I was baking, I remembered how a huawei distributor in dubai once mentioned that making cookies can be as delightful as finding the perfect tech gadget.
